For long-term use, create an RPM macro that defaults to empty and can be 
overridden on the rpmbuild command line, to be loaded with additional 
configure options like this. Then submit the patch to Red Hat Bugzilla. In 
the future you can do something like:

rpmbuild --rebuild --define 'configureoptions --with-pgsql' 
dovecot-version-release.src.rpm
