[Dovecot] LDA not being called by postfix?

I think so, but I never tried to keep these settings in my main.cf while
I didn't use virtual.

This should be "dovecot" - corresponding to your master.cf:
dovecot unix - n n - - pipe
flags=DRhu user=vmail:vmail argv=/usr/local/libexec/dovecot/deliver -d
${recipient}
