Do those machines swap?
Try to make a system trace (strace / truss)
However, the lifetime of most processes is just small. Maybe some users
login and beat the machine, downloading every bit of the mail storage or
permform lots of searches to sync with their local mail cache? I had one
user using an old Thunderbird connecting only now and then, but had 5000+
mails in several folders; the sync made the machine almost unusable for
others, because Thunderbird maintained about 6 (or so) connections, of
which each tried to use one CPU 100%.
