Dovecot was simple on Etch:

apt-get build-dep dovecot
(I cannot remember if the default pulls all and every dev package, e.g. 
for all supported databases.)
downloaded the source
./configure --help | more
./configure [bunch of options]
make && make install

downloaded dovecote-sieve
./configure --help | more
./configure --with-dovecot=../dovecot-1.0
make && make install
