Matthijs, "rawlog" is all correct and is the correct way in Dovecot.

But if you are not prepared to alter mail_execute on the fly, you are 
lost. The change to the "postexec" scripting requires a reload as well, if 
I remember correctly; and you get the performance penalty. Proskurin would 
risk the stability of his server.
