What Dovecot version? What OS do you use? Do you have SELinux or
something similar enabled? See if this patch logs that unlinking .log
file fails: http://hg.dovecot.org/dovecot-1.2/rev/58630516a9d4

Also are your imap processes really running as "mail" user?
