Good email client to use with Dovecot?

I can see it, though I think it’s excessive.

     2011-08
     …
     2016-11
   Postfix
     2001-09
     2001-10
     … 
     2016-11

(repeat for a hundred lists. Add folders for each friend or family member. Add folders for ever domain that sends mail. It’s certainly possible, and someone might even convince themselves it’s ‘organized’.)
