Using Dovecot for IMAP/POP and SMTP

No.  Dovecot is JUST an IMAP/Pop3 server.  SMTP *MUST* be handled via
an MTA (Mail transport agent). Exim, Postfix, Sendmail, qmail, others
are MTA's for SMTP.
