root is the user that executed /usr/sbin/dovecot dovecot is the user "login_user" in dovecot.conf
and "user" in dovecot.conf .... auth default: user: santhosh passdb: driver: passwd-file args: /etc/passwd.dovecot userdb: driver: passwd .... in your case "santhosh", is the user to access to /etc/passwd.dovecot and /etc/passwd files but if the passwords are shadows, the user to access a /etc/shadow must be ROOT.
