[Dovecot] User Mailbox Backups

I realise it is very easy server-side but we have some Outlook users who are use to creating PST backups of their mail.

What is a good open source alternative to the MS PST file? Does it just come down to what the Mail client supports?

Keen to hear recommendations and thoughts on the topic...
