it looks like you are having an issue with your RPM spec file. 'gcc %{__global_cflags} ...' as seen in the config.log is of course not valid, so you need to find the reason why it is not getting expanded. This is clearly not an issue with dovecot itself but an issue with your "build system".

I'm not totally beginner, built dovecot 2.1 rpm-s many times same way like this, but not know mutch about building rpms and with this I just can get to work.
