When developing for v1.2x use check for mail_debug and use i_info(). See for example: http://hg.dovecot.org/dovecot-1.2/file/c275504993c6/src/plugins/quota/quota-...

But when you say you are 'very new' to plugin development, I hope you are using 'very new' Dovecot v2.0. ;-) Then simply use i_debug().
