If I understand sender_bcc_maps correctly, you can configure my first suggestion straight forward.
sender_bcc_maps:
me@example.com me+Sent@example.com
Then pass the detail to deliver's "-m" option, which is the default mailbox the message is filed in.
Sieve could probably limit the detail to some selective ones, if you don't like the subaddressing feature in general.
