Sure, in this case, mail operator != storage operator. It's not apparent those who clamour for it know the difference.

For end user, only PGP or similar provides sufficient security against admin.

For content. Metadata can also reveal a lot.

If the goal is to ensure privacy using a third-party storage provider (and assuming mail handlers are implictly trusted), it seems more productive to invest effort into block/FS level encryption that comprehensively protects all data.
