That's the idea of noatime, but would you hold your breath that it works like so in every circumstance, e.g. mount it noatime, export via NFS, re-export via NFS a second time, put a UNIONFS over it, etc. pp. So it is worth a try to drop all funny stuff for a test IMHO.
