I would recomend you recompile it yourself. Since all RPM's for RHES 3 are old stable releases.
You will find them rpmfind.net (just type in dovecot).
If you want to make RPM yourself it is very simple.
- Get latest .tgz
- Unpack it somewhere and get file dovecot.spec
- Move dovecot.spec to /usr/src/redhat/SPECS/
- Move .tgz file to /usr/src/redhat/SOURCES/
- Go to /usr/src/redhat/SPECS and type rpmbuild -bb dovecot.spec
- You will find compiled .RPM (if no errors occured) in /usr/src/redhat/RPMS/
