Whatever, Thunderbird didn't like that cert saying "bad certificate" (SSL Alert 42).
Now I fetched the cert with Certbot and it works. Really strange though!
Have you contacted the author of dehydrated? Either this is a bug in the program, that should be fixed. Or it is an error in the programs configuration (yours or the default), and that should be fixed, too.
I am just setting up a dovecot installation and was planning on using letsencrypt with dehydrated, too. ;-)
