I working at a project that requires an lmtp server to have
scalability. How about the stability of the actual version (alpha, beta ?). Is it mature to be used at production environment ?

Another question, my 'ideal' setup would be to receive a message by
lmtp and delivers it to an external command (like maildrop). Would it be possible. ?

If you patch the code or create a plugin then yes.
