Catching up with the archives.. Don't know if you solved this already.. but I agree with NOT using Bugzilla.

However I don't see why Dovecot BTS's tracking would have to be any worse than other BTSes.

Have you ever checked out http://www.mantisbt.org?

Seems very user friendly. Don't know about the installation though.
