If you haven't changed base_dir, then the symlink isn't necessary. In the example above I was assuming base_dir had been changed to /var/run/dovecot from the built-in /usr/local/var/run/dovecot.
I left base_dir at it's default, which is $prefix/var/run/dovecot So, no harm, no foul
