We had virtual per-user home directories working practically out of the box with:
user_attrs = uid,homeDirectory,mailDirectory,mailQuota=quota,mailClass=mailclass
in dovecot-ldap.conf. ~/.dovecot.sieve is automatically honored, if it exists, where ~ is replaced with the value of homeDirectory.
(The LDAP attributes you don't recognise are just ia5strings in our own schema).
What's your user_attrs setting?
