Why is this such a problem? Dovecot and postfix work together really well. You *don't* want submission on port 25 unless you do authentication, etc. But port 25 is for just plain SMTP. Especially if this host is exposed on the internet, it's not a smart thing to do.

Dovecot does IMAP well. It's not a mail server.
Can you explain more of what you're trying to do here? And why you think this is a good idea?
Postfix isn't hard to setup and works really well.
