What causes this problem and how can I fix it?

Could you get a gdb backtrace of it? See http://dovecot.org/bugreport.html

Or can you send the mail that causes it to crash? That error alone doesn't really help.

I have no idea which mail causes the problems, because the errors I send are the only ones I get. Is it possible to get a separate dovecot process to run on a different port ( I would then be able to run gdb on it ) ?
