You may HUP the dovecot process, as explained at:

Starting with 2.0, there's also the "reload" argument:

Usage: dovecot [-F] [-c <config file>] [-p] [-n] [-a] [--help] [--version]
   		[--build-options] [--log-error] [reload] [stop]
