Just run let Outlook fetch the mail and it will automatically create a PST.

There is no need for wasting CPU cycles and time converting :-)

I disagree. Outlook will take shorter than you take to write and run a script. In fact, if you gave me the login credential to the server, I'd fetch all the mail with Outlook in a short time and upload for you the PST back into the server :-) Personally, I would not bother looking for a script or even asking anyone if they knew how to convert mbox2pst.
