What part of 1.0-test now not fully tested?
For me, the latest test releases have been pretty stable. But if you're not going to offer imap, you might as well run a simple pop server such as popa3d (http://www.openwall.com/popa3d/). It's quite secure AFAIK -- at least, it's written by Solar Designer and uses a multiple-fork model.
No. popa3d not support mysql userdb. :(
But it probably would help dovecot if you would give the test releases a try, the last bugs (if any) are hardest to find. That way, you would have a stable dovecot sooner.
Yes, of couse.
FWIW, dovecot CVS (development version) has been running here for several weeks with pop3s users having no problems we can find.

Dovecot test releases here for the last 2 weeks with currently 4346 accounts, 2 LVS clustered nodes with NFS filesystem around 350 logins/min per node. Authing via 3 SQL tables. Both POP and IMAP accesses being used (IMAP mainly for webmail), apart from a few minor problems it is as solid as a rock here. We are very happy with it.

How's that NFS part work out for you? The cyrus guys seem to have a deepseated fear of it, which is part of what lead me here.

the problem with cyrus is bdb. it uses it for all it meta informations. and bdb doesnt like nfs because you cant get proper locking via nfs.

Hi Jim,
It works great here, I am using maildir mailboxes on the NFS fileserver and the index files are getting stored on each node's local hard drive, this gets around locking problems a bit. If you are running a clustered system try to keep IMAP connections staying on the same node (LVS has persistant connections for this) as you end up with indexes getting confused easily. If you need any more info, let me know.
