I'm getting a large number of ...

errors. These are confusing my clients. Is there a way to set the
timeout on the dovecot server to help avoid this?

Are either/both of you behind NAT? It's possible your NAT device is
terminating the TCP session after some inactivity period.

-Adam My server and my desktop are on the same /24 subnet -- no NAT involved. It only happens with Outlook. Thunderbird works fine.

What does Dovecot log as the disconnection reason?
I could never find anything in the dovecot logs as to why the connection was disconnected. Is there some thing I should add to my log configuration to allow for more messages?

Dovecot always logs the disconnection. For example:
dovecot: Jul 09 02:16:10 Info: imap(tss): Disconnected
This means that the connection simply got disconnected. If Dovecot itself disconnects the client it logs something else.
Have you seen any error messages either? See http://wiki.dovecot.org/Logging
