For expunging there's http://wiki.dovecot.org/Plugins/Expire for v1.1 and at the bottom some find|rm examples for v1.0.
What do you mean by automatic moving? Moving messages marked as deleted to trash? http://wiki.dovecot.org/Plugins/deleted-to-trash was added recently, but I'm not completely sure what exactly it does.

I believe you need to change an option with Outlook to make it hide the deleted messages: http://email.about.com/cs/outlooktips/qt/et060204.htm
The other thing I found with Outlook is that you may need to tweak the Deleted/Sent folder options depending on your setup. Outlook defaults to namespace so if you are using any kind of namespace on your server then I think the deleted and sent folders default to being local? If you have used Dovecot suggested options then you will have a flat namespace so disregard this... (I was using Courier before, hence this was an issue)
I think some versions of outlook may also need you to flick an option to set them to store Deleted/Drafts and Sent on the server??

To the best of my knowledge, there is no such option.
You can setup a rule to copy sent messages to the server, which is
annoying but not hard to fix. But I've never seen any option to move
messages to the trash rather than delete them. If such a thing exists
I'd be very grateful if you'd share it with me.
