Is there a way to run dovecot locally as a user, like uw-imap lets you do? I want to use dovecot with fetchmail over ssh... I couldn't find anything in the archives on this.

Of course, you can. Just exec the /usr/local/libexec/dovecot/imap binary (or wherever it is located in your system -- I use the FreeBSD path). Launching the binary as a user will get you into pre-authenticated mode, just the way you want.
