If you set it globally, it applies to all Dovecot services. If you put it inside some protocol {} section, it only applies to that specific service. So, depends on what you want to do.. Some examples only set it to lmtp/lda because tempfailing them isn't as bad as failing IMAP/POP3 command.

Ok. I intend to use it with OCFS2 storage. So, that would do the trick:
protocol lmtp { mail_max_lock_timeout = 50 postmaster_address = admin@example.com }
