Well, the Dovecot server won't do this for you. But the Dovecot LDA can do it, if you write Sieve scripts to do it. There's more details in the Wiki, or you could look up the Sieve RFC.

One could also use procmail as one's LDA. This is the standard configuration on Red Hat distros. What does the Dovecot LDA offer over procmail?

Most people consider SIEVE to be easier for humans to use to create filters. Plus dovecot-lda will automatically updated the Dovecot indexes.

Updating the indexes, mainly, which can greatly speed opening folders for users. Also, I believe Procmail uses its own filtering language? I'm not sure on the specifics, but some grey beards I know said they prefer the safe-failure nature of Sieve.

Your belief is justified.

Procmail goes at great length to ensure no data gets lost, including a number of fallbacks upon error.

If you tell Dovecot to look mboxes in Mail/ directory, it should find them:
default_mail_env = mbox:~/Mail:INBOX=/var/mail/%u

At least you must be knowing the difference between an MTA, an MDA, a
POP3/IMAP server, a MuA and filters, like procmail, yes?
Once you get what the gist of the above, you will realize why noone
responded ;)
