Yes. Look at dovecot.conf and read it line by line, and then make the
decision about the "Protocols we want to ..." - it's in there.

Yes. Just don't let dovecot listen on pop3 port. Let it do only
imap. Have you even tested dovecot at all? You cannot implement
anything you haven't tested in a production environment, unless
you are crazy.

to run any server service at all!!
