Thank's for this suggestion, but it doesn't solve my problem...
In fact I also have the same configuration on other servers, with
protocol imap {
  }
protocol pop3 {
  }
and it works well.

Again, dovecot can work if I keep it in the foreground... which is very 
surprising ! :)
