I've set it to default_mail_env = maildir:%h/Mail:INBOX=%h/Mail/.INBOX
(and also tried it with default_mail_env = maildir:~/Mail:INBOX=%h/Mail/.INBOX)

Unfortunately it's still doing the same thing. It reads $HOME/Mail as the inbox, rather then $HOME/Mail/.INBOX
