Dunno, what doc you are referring to but there is: 
http://wiki.dovecot.org/LDA/Sendmail

I think you must put "virtualdomain.example.com" into 
/etc/mail/relay-domains as well, but I may be mistaken.

There might be a problem with SMTP AUTH, because there is no Dovecot SASL 
patch for sendmail, I'm aware of, as it is present for postfix. You have 
to setup Cyrus SASL for that.

How you manage those users is no duty of Dovecot or Sendmail. Both use 
existing databases.
