Your Sent folder is ignored, because the Trash folder should be ignored.
And the wiki <http://wiki.dovecot.org/Quota/Maildir> mentions:
    "Note that there can be only one ignore setting." (v1.0.x)

Upgrade to v1.1.x or better 1.2.x. So you can configure multiple quota
(ignore) rules.
