[Dovecot] Everytime I start my mail client it downloads all message again!

One thing that comes to mind, is when you delete a message using a mail
client and an IMAP account, it usually does not actually delete the
message. It only marks it as deleted, but the message remains at the
server until the client tells the server to clean them up. Thunderbird
in particular does this (TB calls it "Compacting"). Maybe Xdove
misinterprets the deleted flags, and downloads and shows the message as
normal mails.

An easy way to check if this is the case is to connect to the IMAP
account using mutt. If the messages are in fact only marked and not
actually deleted, you will see a "D" next to the message.
