If you tell Dovecot a user's home directory, Dovecot expects to be able
to use it.

One of these should work (in preferred order):

userdb passwd {
  args = home=
}

userdb passwd {
  args = home
}

userdb passwd {
  args = home=/home/%u/Maildir
}
