be aware that new /var/log/dovecot.log after rotate is writable to the
dovecot user
after all i would use daily

logrotate differs a little bit from distro to distro

simply try it

logrotate --help
Usage: logrotate [OPTION...] <configfile>
-d, --debug Don't do anything, just test (implies -v)
  -f, --force Force file rotation
-m, --mail=command Command to send mail (instead of
`/usr/bin/mail')
-s, --state=statefile Path of state file
-v, --verbose Display messages during rotation

so i.e

 logrotate -f -v /etc/logrotate.d/dovecot
will help to test

and/or
