Maybe you should check:
http://wiki2.dovecot.org/Debugging/Rawlog
and see if the IMAP commands make sense. Check if IMAP validity / UIDs 
changing ... .

If "it can take a while", maybe the connection gets interrupted or 
corrupted and some client is trying to work around this.
