I am not sure what you are trying to achieve. But I would almost say you 
should do something with sendmail routing or so. Then you route messages 
to any server and any destination email address as you like. Without 
changing the headers and you may not need to add a reply-to header.

Your story conflates the message envelope with the message header. From 
your description, I gather you in fact mean the message headers that 
contain sender and recipient addresses. You should be able to modify 
those using the editheader extension (first deleteheader then 
addheader).
