FWIW, works for me just fine.

I created a brand new, fresh, CentOS 7 image in the cloud.

Configured Dovecot repo as described here:

https://repo.dovecot.org/

Did yum install and it worked just fine (see the output below).

Maybe you can do

yum list "dovecot*"

????

So we can see what you have installed right now vs. what your system sees in the repo?
