[Dovecot] LDAP authentication stops working...

So, you're not really using LDAP with Dovecot, you're using PAM and NSS.
Most likely the reason for your problems is nss_ldap, and as you can see
Dovecot even once in a while notices that it's broken. Try switching at
least your userdb passwd to userdb ldap.
