I just wait for it to show up in sid. You could also apply patches yourself and rebuild, either way works.
Or just grab the excellent source package provided by Stephan Bosch at http://xi.rename-it.nl/debian/pool/dovecot-1.2/ - e.g:
aptitude -y build-dep dovecot (you only need to do that once)
