Hi,
Since Apple updated the IOS version 18 all my iOS devices with version 18 and above could not use IMAP connections with the apple native mail client. After lots of googling I found that others got it working using Exchange Active Sync, this requires EAS on the server which is included in the Horde Groupware or in Z-push which can be downloaded from z-push.org <http://z-push.org/> which I am using with only the IMAP backend configured, php is required and the libawl-php libraries which all can be downloaded from the distribution repositories.
I had authentication issues with just the username only and I could get it working by using the username@domain (found this information in the apple community). All my mail users are virtual users and kept in a mariadb database created by postfixadmin. I am too using self signed certificates with the root certificate downloaded to the IOS devices. I have this configurations working on test servers using Debian bookworm and trixie, and on macOS Sonoma with all the application from macports.

My work around was to use Exchange Active Sync (EAS) and z-push only IMAP enabled on the server, works with 2.3 and 2.4. Horst

Hi Daniel!
In my case, if I connect over imap things work, but over imaps the imap process dies
We're on Dovecot 2.3 and can't get IMAPS to work on new iPhones / recent iOS versions. If the mail account was set up on an old iOS version, it continues to work even on latest iOS versions. But we cannot onboard new users on new iOS devices.
We use IMAPS only. Unencrypted IMAP is entirely disabled due to EU GDPR. Maybe the problem is related? (IMAPS vs. Apple?)
Our certificate (chain) is fine. It works flawlessly on Thunderbird (Windows and Linux), MS Outlook (Windows) and K9Mail/Thunderbird (Android) without security warnings etc.
The problem exists only with modern iOS devices and the default iOS Mail App.
Our workaround is buying Android phones only.
