[Dovecot] changing user mail folders

I have a working dovecot server with user mail in 

Maildir:~/Maildir

 

What is the proper way to change the location of user mail to

/var/mail/username

to take advantage of a large /var drive space?

 

Would you recommend adding the creation of new user directories in /var/mail
to my Redhat "adduser" script to get the permissions correct?  Or via some
other method?

Also, any idea how to make Postfix deliver mail to the the new user
directories?
