This is a caching problem, not an NFS problem.
See /etc/roundcube/main.inc.php

// enable caching of messages and mailbox data in the local database.
// this is recommended if the IMAP server does not run on the same
// machine
$rcmail_config['enable_caching'] = FALSE;

Change that to TRUE.  You will also need a database configured on the RC
host, such as sqlite or mysql.
