Doug, according to the wiki it should be:

mail_plugins = $mail_plugins stats
protocol imap {
   mail_plugins = $mail_plugins imap_stats
}

It sounds as if you were missing the first line in global config scope.

For auth stats add to your config:
auth_stats = yes
