Is there any reason you can't use the 20.04 packages?
This is working fine for me...
dwhite at mail:~$ sudo doveconf | head
# 2.3.7.2 (3c910f64b): /etc/dovecot/dovecot.conf
# Pigeonhole version 0.5.7.2 ()
# OS: Linux 5.4.0-42-generic x86_64 Ubuntu 20.04 LTS ext4
But yes, do let us know what your problems are, and I'm sure someone could help.
